LEMON RICE SOUP

 

HERE’S A DELICIOUS SOUP RECIPE FOR YOU TO FINISH OUT WINTER WITH. it’s lemony, fresh, and just a bowl of cozy. we’re talking fresh herbs, fresh veggies, fresh lemon juice, and fresh bone broth. yes, the bone broth is a necessity, so do yourself a nutritious favor & don’t skimp // click here for my bone broth recipe. this soup is equally nourishing as it is delicious, try it out and let me know what you think!

 

INGREDIENTS //

◡ 1 tbsp butter, or ghee

◡ 1 small yellow onion, diced

◡ 4 cloves garlic, minced

◡ 3 stalks of celery, thinly sliced

◡ 3 large carrots, thinly sliced in half moons

◡ 1/2 cup dry basmati rice

◡ 5 cups bone broth

◡ 1 can(15oz) of cannellini beans, drain & rinse

◡ 1/2 cup of lemon juice, about the juice of 2 lemons

◡ 2 bay leaves

◡ 1 parmesan rind

◡ salt & black pepper

◡ 4 tbsp fresh dill, chopped

◡ 6 tbsp fresh parsley, chopped

◡ grated parmesan cheese for topping

◡ optional ingredients // you could add in seared chicken as a protein source, kale, fresh oregano or basil, etc.

DIRECTIONS //

heat the butter, or ghee, in a medium pot over medium-high heat. add in the onion, and cook until fragrant, about 3-5 minutes. add in the garlic and cook for about a minute. add in the carrots and celery and cook for 5 minutes, allowing a good color to develop on the veggies.

add in the dry rice, salt, and pepper. stir and allow 1-2 mins for the rice to get a bit toasty. while the rice and seasoning is developing, blend the rinsed cannellini beans with 1/2 cup of the broth, adding blended beans with act as a thickener for your soup, while also making it more hearty.

in your soup pot, pour in the bone broth, the lemon juice, and the blended batch of beans while stirring to combine. toss in the parmesan rind and bay leaves. bring to a boil. once the soup is at a boil, turn down the heat and allow it to simmer on medium-low heat, covered. simmer until rice is tender, about 25 minutes.

once rice is tender take out the bay leaves and parmesan rind. add in the fresh chopped herbs, stir to combine & serve. top with grated parm and enjoy! :)
