PICKLED RED ONIONS
YOU GUYS, i drool over these pickled onions!! as we welcome spring and head into summer these become a staple in our household as they’re a yummy addition to sooo many meals/snacks. they’re tart, simple ingredients, easy to make, and not only are they delicious, but they definitely deliver in the ‘good for you’ category.

(if you’re anything like me then you’ll even love them straight from the jar!)
INGREDIENTS //
◡ 1 large red onion, thinly sliced
◡ 1 cup of hot filtered water
◡ 1/2 cup of apple cider vinegar
◡ 1 tablespoon sugar, i use and recommend raw sugar over processed
◡ 1/2 tsp salt
◡ optional ingredients // whole peppercorns, red chili flakes, sliced jalapeños, thinly sliced garlic, chopped herbs such as dill, parsley, or cilantro, or you could even crumble up a bay leaf for additional flavor
DIRECTIONS //
place your thinly sliced onion into a jar of your choice, just be sure you have a lid for it.
add your salt, sugar, ACV, and water to a bowl. stir until the sugar & salt have dissolved.
then you’ll pour your liquid mixture over your jar of onions, making sure to completely submerge the onions in the liquid.
allow the jar to sit uncovered for 1 hour. then cover and store in the fridge for up to 3 weeks, if they manage to last that long. :)
