SLOW COOKER MEATBALLS & MARINARA
do i have a treat for YOU! the yummiest, juiciest, and simplest recipe for meatballs and marinara sauce. not only does this deliver in the deliciousness category, but it’s also a winner for those who are looking for a quick ‘set it & forget it’ meal. all in all this takes about 10-15 minutes to prep & 4 hours cooking on low in a slow cooker. finish by cooking any noodle that you desire, and you have yourself an effortless meal that tastes anything but effortless! :) *chefs kiss*
INGREDIENTS //
meatballs:
◡ 1 lb 85% lean ground beef
◡ 1/4 red onion, chopped
◡ 1/4 cup blanched almond flour
◡ 2 tbsp chopped fresh parsley
◡ 1 tbsp italian seasoning
◡ 2 tsp garlic powder
◡ 2 tsp onion powder
◡ 1 tsp red chili flakes, amount dependent on spice preference
◡ 1 egg
◡ salt & pepper to taste
sauce:
◡ 28 oz can crushed tomatoes with basil
◡ 6 oz can tomato paste
◡ 1/4 red onion, chopped
◡ 3 cloves garlic, minced
◡ 1 tbsp italian seasoning
◡ 1 tbsp dried oregano
◡ salt & pepper to taste
◡ optional ingredients // top with freshly grated parm & chopped herbs(parsley, basil, oregano, etc)
DIRECTIONS //
combine the almond flour and all the meatball seasonings in a small bowl, and mix it all together.
in a larger bowl add your ground beef and sprinkle with a pinch of salt. then add the egg, parsley, onion, and the seasoning mix. using your hands, gently mix it all together until everything is evenly distributed and well combined. buuuut be careful not to over mix as the meat can become tough. allow mixture to sit.
add all the sauce ingredients to the slow cooker and mix well to combine.
form your meatball mixture into 10 medium-sized meatballs, or 20 small-sized meatballs. add the meatballs to your slow cooker and spoon sauce over them to fully submerge.
cover the slow cooker and allow to cook on low for 4 hours, or until meatballs are fully cooked through.
make any noodles that your heart desires, add some meatballs and sauce and you have yourself some delicious spaghetti and meatballs! enjoy :)
